Pesticides, which are toxic chemicals, are widely used in agriculture to increase crop yields. These substances have been linked to metabolic disorders, carcinogenic effects, neurotoxicity, and fertility issues. Potatoes, a vegetable widely consumed by the Algerian population, are particularly contaminated with pesticides. The objectives of this study are to investigate the toxicity of certain pesticides commonly used in potato cultivation: metribuzin and mancozeb. In vivo assessment of the long-term effects of low-dose pesticides on lipid and protein metabolism, oxidative/antioxidant status, the activity of certain enzymes, and the histology of various organs allows for the identification of functional and structural disturbances in male and female rats. The results show that pesticide treatment induces a decrease in body weight, increased levels of urea, creatinine, and transaminases, and hyperlipidemia. Furthermore, alterations in the oxidative/antioxidant status are noted. The histology of various organs is characterized by architectural disorganization.
