When at least one person uses a knife in a violent altercation amongst multiple fighters, the term "knife fight" applies.
The use of a blade in battle with the hostile aim of killing or incapacitating the other person is what defines a knife fight. The fighters involved can be totally untrained, have learned the technique on their own, or have been trained in a specific school of knife fighting. The application of any bladed weapon is fair game in a knife fight, although there are specific blades-the dagger, for example-that are made for combat.
Teaching knife fighting-A knife battle nearly always results in cuts for both parties. I recommend escaping a knife fight if possible. Most importantly, never threaten with a knife. You must be morally and legally justified before using a knife.
This great book will teach you everything you need to know about knife fighting and much more.
