He has no idea how differently the British hospitality industry compares to his restaurant/hotel experiences in Singapore. Nor is he prepared for the colourful characters - the good, the bad, the lazy, AND the downright ugly - he meets during his regular 15-hour-plus shifts in busy hotels.
